Ingredients;

• 2 pounds Chicken feet

• 1- pound chicken wings

• 1- pound chicken legs

• 1- 13.5 fl oz can coconut milk

• 13.5 fl oz water

• 1- tablespoon palm sugar

•1- to 2- teaspoon salt – to taste

• 1- cup green curry paste – to taste

• 1- cup or to taste mushroom

• 3 to 5 kaffir leaves – chopped

• Thai or cinnamon basil – to taste

• 1-tablespoon olive oil

• Fish sauce – to taste

In the coconut milk and water, boil your chicken till cooked through. Note that when using chicken with bone in, cut the chicken and bone in to pieces with a meat clever. Cutting the bone makes the meat have more flavor.

Next in your wok put in some olive oil to start cooking the curry paste. Once you start it cooking you can start adding the coconut milk / water that you boiled your chicken in. Stir as you add the coconut milk / water.

Once you get the curry thinned out, add the chicken and rest of the coconut milk/water from boiling the chicken. Bring this to a boil and add your mushrooms. Cook till you mushrooms soften up a little. Add your fish sauce to taste.

Last put in the basil and kaffir leaves. You really do not want to cook too long with these last two ingredients.

Enjoy with with rice or rice noodles. Either way is really good.

You can if you want, boil your chicken till just about ½ done and then finish cooking the chicken the curry paste coconut milk and water before adding the other ingredients. This will give the chicken a better curry flavor the first time served. As you can see we made allot of this dish for later meals. You can also cut the amount down of all the ingredients for a smaller batch. Green curry can be very spicy if allot is used. Also you can use any chicken part that you like. We just happen to like chicken feet. They are allot like eating the small parts of chicken wing tips. If you do want to try the chicken feet, when you buy them they are cleaned but will have to have the toe tips with nail cut off f them.
