Homemade Thai Sausage
Sai Krok Moo

Homemade Thai Sausage
Ingredients:
- 2 cups Ground Pork
- 1 ½ cups cooked rice
- 2 tablespoons chopped garlic
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon Soy sauce
- ½ teaspoon chicken soup base powder
- pork sausage casings
Mix all ingredients together except pork sausage casings.
Using a small mouth plastic bottle with the bottom cut off, slip the sausage casing over the mouth of the bottle to stuff it. Use a wooden dowel rod to push the mixture into the casing. Stuff them to the desired length and twist the ends together.
Thai Sausages can be cooked immediately but if you’re looking for authentic Thai taste, set the stuffed sausages aside and allow to sit out at room temperature for 12 to 48 hours. This will give them a sour taste. The longer they are out, the more sour they will be. Twelve (12) hours is a good starting point if you would like to try them this way.
Homemade Thai Sausages are generally grilled or sometimes fried in a small amount of oil.
