  • 25 Thai chillies dried or fresh
  • 1 root of Turmeric or 1 teaspoon of powder
  • 6 to 8 cloves of garlic
  • 1 or 2 small red onions
  • 1 teaspoon of sea salt
  • 1 tablespoon of shrimp paste

Grind all ingredients together until it is well mixed.

  • 1/2 of a pineapple
  • 8 to 12 fresh water shrimp cleaned
  • 2 tablespoons of tamarine concentrate
  • 1/2 to 1 tablespoon of sugar
  • 3 tablespoons (or to taste) fish sauce
  • 1/2 to 1 tablespoons  lime juice
