In order to be able to perform Thai Cooking is you must have the right ingredients to use. You can always go to your local Asian food market or order on line. Some of the best places we have found on the Internet are My Thai Mart and Thai Supermarket online. They have groceries such as fruits, veggie’s, curry, sauces and fresh produce. They are not priced not too bad even with shipping if you have to order online because you cannot find them at your local Asian food market.
Thai food is alive with the flavors of salty, sweet, sour, bitter and hot. Many of Thailand’s dishes can give you more than one of these tastes from one dish. Most Thai dishes are spiced on the warm to down right hot side. But not all Thai food is spiced this way.
One of the most important ingredient you will need is Fish Sauce. You have to use this to get the real Thai taste. To the right you see here is two of the popular brands sold. Squid Brand is made the slow way with no additives. The Three Crabs Brand has Fructose in stead of sugar and Hydrolysed Vegetable Protein added to it to speed up the fermentation of the Fish Sauce. Both have Anchovy Extract, salt and sugar. Again both taste excellent.
You can always grow some of your own herbs too. Here to the left is a Kaffir Lime tree. You use the leaves and any fruit you might get to grow. We have set up a grow light and try to keep the plant no cooler than 60 deg Fahrenheit in our winter time. It will grow very good in the summer.
Here to the left is a Thai Basil or Cinnamon Basil. This plant here is at the end of its life. It is one we brought in from our garden. We will start new plants in February so that they get a real good start before planting outside this spring.
One of the most important tools to use in Thai Cooking is a Mortar and Pestle. It is used to smash or grind pepper, garlic and any other herb or spice you use. This is made of granite. Do not get the clay version of this tool. They will break very easy. They are used to make salad with and not meant to do heavy grinding in.
